Carrot Dessert


Here is a quick and delicious dessert you can make with Carrots. Not only this is nutritious your kids will love this dish and may be its their all time favourite dish. You can both serve it warm or cold or just at room-temperature.

Ingredients:
Fine Grated Carrots     -  1/2 Kg
Sugar                            -  1 cup
Clarified Butter            -   3/4 cup
Cardamom powder      -   1 tsp

Select fresh and preferably organic carrots. Make sure you select big size as shown so that it is easy to grate.

Here are the ingredients.

Note: Clarified butter is nothing but melted butter with almost no water content. If you do not get Clarified butter readily available, then you can melt almost 1-cup of butter to make around 3/4 of Clarified butter. But in-fact you can make this dish all-together with butter also.

Into a wok add the Clarified Butter (or butter) and melt the same in a low flame. Once it is melted, add grated carrot and stir occasionally for around 20-25 minutes. Make sure you are not actually frying the contents, it is just required to cook the grated carrot in a low flame. This will cause it to release the steam.

Tip: If you feel it is quite getting dry, you can just sprinkle occasionally few drops of water. So that it does not dehydrate and instead gets slowly cooked in steam released within it.

After around 20 minutes, you can now see the difference in consistency. It may lose the colour and get pale a bit as shown. Once again as you can notice it is not stir fried, instead it is cooked gently in a low flame.

Now you can add the sugar to it. And stir it occasionally. With the steam released by the cooked grated carrot, will allow the sugar to melt gently.

After adding the sugar, gently cook for 10-15 minutes in a very low flame. This changes the consistency as shown.

Now you can garnish with cardamom powder, and with your choice of nuts and dry fruits.

Transfer the content into a large bowl and there you have a great dessert for your guests in a party.

Note: You can serve it along with Vanilla Ice-cream.

Rasgulla is a traditional Bengali Sweet. It is appreciated for its smooth texture and the simplicity of the flavour. Often people buy Rasgulla tins from a store, but it is one of sweets which can be made passionately at home. Here is a simple recipe which shows you how to make delicious Rasgulla at home. Ingredients: 1 litre - Milk 2 tbs -  Lemon Juice (or vinegar or citric acid) 1.5 cup - Sugar 1 pinch - Cardamom powder (optional) 4 cups - Water Pour the milk into a large thick vessel and place it on a low flame. Meanwhile grab a stainless steel juice strainer as shown. Avoid using coffee/tea strainers for this job. Cover it with a thin white cotton cloth as shown. When the milk is hot enough (just before it raises up) squeeze the lemon juice as shown.
