Here is a simple delicious dish ideal for your Sunday brunch. Its tasty and healthy gets along well with your favourite wine or beer !
Ingredients:
Seasonal Fish - 400 grams (around 5 pieces 1-cm thick)
Tamarind paste (or extract) - 3 tsp
Ginger Garlic Paste - 3 tsp
Turmeric - 1 tsp
Paprika - 4 tsp
Corn Flour - 5 tsp
Salt to taste
Vegetable oil - to roast
Get seasonal fish of your choice, clean it and cut into slices around 1-cm thick as shown below.
Here are the bunch of ingredients you need.
For Giner-Garlic Paste:
Prepare fresh giner-garlic paste around 3 tsp with equal quantity of ginger and garlic.
Tamarind Extract (or Puree):
You can use a ready made Tamarind puree, or if you have Tamarind at home, soak the tamarind around 15-minutes in water. Squeeze and filter this extract to get Tamarind extract.
Note: If you do not have Tamarind, you can substitute with Citric Acid or Vinegar. But do not use Lemon Juice, since while roasting it gets bitter.
Into a bowl add all these ingredients (i.e) Tamarind Extract, Corn flour, Paprika, Turmeric, Ginger-Garlic paste, Salt and mix into a fine paste. If required add few teaspoons of water to get right consistency so that it sticks to the fish when you rub the same on it.
Note: This is both your marination, as well as the spice mixture for your Fish Roast.
Before you apply the spice paste on to the fish, poke couple of times with a fork as shown below. This allows the spice mixture to penetrate and absorb deep within the fish slices.
Evenly coat all the sides of the fish with the spice mixture paste as shown. Keep it in the refrigerator for 4-5 hours so that it absorbs the spice flavour. If you wish you can actually leave it overnight in a refrigerator too and cook it fresh on the next day.

Add few teaspoons of vegetable oil onto a pan (preferably non-stick) placed on a low flame. Gently add the marinated fish as shown below.
Roast for 8-9 minutes on one side, and gently flip the pieces as shown. And once again allow it to cook for 8-9 minutes.
Now the fish is almost cooked, you can now flip it couple of times for 2-3 minutes and cook on both sides.
Tip: If you wish to grill instead roasting on a pan as shown above, you can do it.
It will taste amazing when cooked with a charcoal barbeque and with open fire pit. Just before grilling you can brush a coat of vegetable oil and cook the same.
Serve the Roasted Fish with a fresh slice of Lemon and Coriander !
